Greening walls and gardens of consumable plants on roofs, collective planting amongst residents, beehives and hen houses in an urban environment... Paris is reintroducing nature and food production in its very heart. For instance, lettuces, tomatoes, courgettes, radishes, onions and cucumbers are growing on the roof of the Matisse secondary school (20th arr.) now. n _ paris.fr 8 O n the menu this lunchtime at Hospitalières-SaintGervais school (4th arr.): beetroot, pork chops, lentils with carrots, Saint-Nectaire cheese and yellow peaches. Judging by the children's smiles, they all love the meal. It's good, but above all it's healthy. Lots of fresh fruit and vegetables come from the Ile-deFrance region and are organic, the bread served is organic and the meat and cheese are certified. There are no ready mixes; everything is cooked on site with great care. Gradually, accredited food produced by organic farming methods has found its place on plates and "introduces children to seasonal produce while raising their awareness" emphasises Virginie Duchesne, Manager of the 4th arrondissement Schools Fund. Paris has set itself the target of achieving 50 % sustainable nutri- tion in schools, crèches, retirement homes and staff canteens by 2020, compared to around 27.3 % in 2014. The Sustainable Food Plan includes organic, local and seasonal produce and food which has been accredited ("Label rouge" for poultry and "Pêche durable" for fish). One vegetarian dish per week In order to achieve its aims, Paris encourages the development of local farming industries and supports producers in the Ile-deFrance. It has also committed itself to offer once a week a vegetarian dish. The idea? To offer more environmentally friendly and diversified food, thus reducing greenhouse gas emissions.
